Mango Crisp

If summertime in your area means an abundance cheap mangoes, this is a lovely way to prepare the tropical treat. Make the same with peaches if mangoes are a luxury where you live.

peeled, sliced flesh from 6 ripe mangoes
3/4 cup flour
1/2 cup cold butter, cut up into 8 pieces
1/2 cup sugar
1/4 teaspoon powdered ginger
dash of salt

vanilla ice cream

Preheat oven to 450 degrees. Butter an oven-safe casserole dish. Layer mango slices. In a food processor or blender, combine remaining ingredients until well blended and crumbly. Spread crumbs over mangoes. Bake for 15 minutes. Reduce heat to 350 degrees and bake another 10 minutes.
Let cool somewhat, then serve over ice cream.
