Sweet and sassy! Use this recipe over poultry or fish or just gobble it up with tortilla chips. Great compliment for fish or chicken. Be aware this salsa is best served the day it is made.
2 cups peaches, chopped
1 cup red onion, chopped
4 tablespoons (packed) fresh cilantro, chopped
2 tablespoons fresh lime juice
2 tablespoons jalapeño with seeds removed, minced (If your skin is sensitive, wear rubber gloves when handling peppers.)
2 tablespoons white sugar
Serve with tortilla chips
Toss all ingredients in a medium bowl until well blended. Serve immediately or refrigerate until ready for use.
