Queso Fundido

Richer and prettier than Classic Queso, Queso Fundido (literally, “melted cheese”) is a cinch to make and dressy enough to serve an an upscale cocktail party. Use a small (6 inch or smaller) broiler-safe pan, preferably cast iron. We used queso fresca & queso quesadilla, but any single combination of Mexican cheeses will work well. In an pinch, you can even use Jack. It won’t be the same, but it should still be yummy. Leftover makes great enchilada filling. You can successfully reheat leftovers in the same pan once. More than that, and the cheese will separate.

4 ounce queso fresca, crumbled
4 ounce queso quesadilla, shredded or broken up
3 whole roasted green chiles, cut into 1 inch strips (or one small can, drained)
corn tortillas

Preheat oven to 400 degrees.

Toss ingredients in pan.

Place in oven until melty, about 10 minutes. Set oven to broil/heat broiler. Broil for about 2 minutes, until top is bubbly and brown in spots.

Meanwhile, warm tortillas on a griddle or in the microwave.
