Turkey and White Bean Chili

If the legs are always the last go go at your dinner table, you’ll love this quick and easy chili recipe. It’s also great with chicken or pork

2 tablespoons olive oil
1/2 yellow onion, chopped
1 cup of your favorite stock (beef, chicken, or veggie)
2 cups chopped cooked turkey meat (about two good-sized drumsticks), or chicken or pork
1 teaspoon cumin
1 tablespoon chili powder
1 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons oregano
5 cloves garlic, crushed
1 can whole tomatoes, coarsely chopped, plus liquid
1 can white beans, rinsed and drained
1 tablespoon cornstarch dissolved in 2 tablespoons water
sour cream, Monterrey jack cheese, cilantro, and green onions, as garnish

Sauté chopped onion in olive oil until soft, about 5 minutes. Add turkey, garlic, and spices, stirring constantly. Add a bit of stock and deglaze the pan if it dries out too much.

Pour in remaining stock, tomatoes with liquid, and beans. Stir to combine.

Add cornstarch solution and stir to combine completely. Simmer on very low, covered, about 15 – 20 minutes. Serve with tortillas or cornbread.
