Cheesy Baked Mashed Potatoes

Next time you make mashed potatoes, make more than you need and bring the leftovers back to life with this quick, dreamy side. Feel free to substitute cheddar, Monterey jack or blue cheese. Top it off with crumbled bacon bits before baking for an extra kick.

This makes 4 normal or 2 very generous servings.

2 cups leftover mashed potatoes
2 tablespoons butter
2 ounces crumbled goat cheese
2 ounces shredded Monterey jack cheese
salt and pepper
1 teaspoon crushed red pepper, optional

Preheat oven to 400 degrees. You’ll need an oven-proof casserole dish or dishes. You can use a small (1 – 2 quart) casserole dish, 2 individual 1-cup casseroles, or 4 6-ounce casseroles. Bring potatoes to room temperature, or microwave a minute or two.

Pack potatoes into dish(es). Dot with butter, then sprinkle with goat cheese and Monterey jack. Bake for 20 minutes, until cheese begins to brown. Sprinkle with salt and freshly-ground black pepper.
