Next time you make mashed potatoes, make more than
you need and bring the leftovers back to life with this
quick, dreamy side.
This makes 4 normal or 2 very generous servings.
2 cups leftover mashed
potatoes
2 tbsp. butter
2 oz. crumbled goat cheese
2 oz. shredded Monterey
jack cheese
salt and pepper
Preheat
oven to 400°. You'll need an ovenproof casserole
dish or dishes. You can use a small (1 - 2 qt.) casserole
dish, 2 individual 1-cup casseroles, or 4 6-oz casseroles.
Bring potatoes to room temperature, or microwave a minute
or two.
Pack
potatoes into dish(es). Dot with butter, then sprinkle
with goat cheese and Monterey jack. Bake for 20 minutes,
until cheese begins to brown. Sprinkle with salt and
freshly-ground black pepper.
