Spinach Salad with Bleu Cheese

A lovely, simple side that marries well with a complex, multi-flavored entree. You can add/substitute any of your favorite salad veggies to this dish. If bleu cheese does not make you sing, try feta instead.

Makes 4 servings

Salad:

spinach leaves, washed, dried and stems removed
one ounce bleu cheese, cubed
half a cucumber, diced
1 red onion, sliced into rings
5 cherry tomatoes, halved

Dressing:

1 tablespoon balsamic vinegar
3 tablespoons olive oil
1 tablespoon honey
1/2 tablespoon water

Combine ingredients for dressing. Toss with spinach leaves, vegetable and top with bleu cheese.
